Chorizo Enchiladas

It’s hard to believe, but in all the years we’ve visited or lived on the island, we’d never been to Santa Fe Cafe. It’s in one of those centers that you just drive by if you’re not careful. So, so glad we made the decision to finally stop by for lunch. Andy got the Chorizo Enchiladas, and, wow, were they good! The chorizo was plentiful, and the cheese and green sauce blended perfectly, giving it a nice southwestern flair. The mashed black beans and rice were the cherry on top of this dish, one that Andy plans to explore again on a future visit.
